Directions:

Heat the coconut oil in a heavy skillet over medium flame and stir in the onion and garlic. Sauté for 5 minutes until soft and translucent then add the garam masala, chili pepper, curry powder and tomato puree. Pour in the coconut milk and vegetable stock and cook 10 minutes on low heat. In the last 10 minutes of cooking, add the cubed fish and cook just until tender. overcooking the fish will shred it so make sure you don't leave it more than that. Adjust the taste with salt and pepper and serve the curry warm.
